The Pearl’s Southerleigh Fine Food & Brewery
a culinary dream team obsessed with food
Adaptive re-use and restoration of the historic Pearl Brewer’s Association building, the 7,500 SF, two-level boutique, luxury eatery, and microbrewery is located at the new Pearl hotel. The project includes a full kitchen, seating area and complete micro-brewery.
The micro-brewery and restaurant is located in the 1900’s-built Pearl Brewery, requiring extensive rerouting of the HVAC and piping systems. With the assistance of BIM, the kitchen equipment and grease duct from the cooking hood and pizza oven, boiler flue and steam piping, and HVAC supply were rerouted to accommodate existing conditions in the facility.
All of the systems had significant structural and other competing system routing conflicts including domestic cold & hot water, boiler piping-supply and return with heavy insulation, chilled water supply & return and condensate collection, auto fire sprinkler water, and roof drains and sanitary lines from hotel rooms above the restaurant space that had to run through restaurant.
Named for the prevailing Gulf breeze and the Texas coast’s proud sense of place, Southerleigh serves Chef Jeff Balfour’s modern take on Texas’ cross-cultural cuisine.
The on-premise brewery offers a rotating array of original recipe, craft batch beers from Brewer, Les Locke. Guido Construction was honored to be part of such a critical part of the fine dining Pearl Experience.
